Food in the suburbs - Victoria shares her recipes and reviews local restaurants
11:57pm Monday 20th April 2009
I feel sorry for the people still eating their dinner late tonight at the Coliseum at Cheshire Oaks.
We were enjoying the Thick of It film, In the Loop, at Vue when the entire area lost power. We waited for a good twenty minutes before leaving (with free tickets for next time, but still)...
We were imagining how strange it would be to be stuck in a dark restaurant suddenly - I can only imagine they were escorted out straight away, health and safety and all. At least in the cinema the lights came on automatically.
Even the street lights and Burger King were closed for business. So, what's a quick fix for a late night supper?
French Toast with grilled bacon and maple syrup.
I know people aren't keen on bacon and sweet maple syrup - but it works. They've both got a smoky flavour that works perfectly with the lightly fried eggy bread.
For two slices of French Toast, mix 1 egg with 1/4 cup milk (semi-skimmed is fine). Add a tiny bit more milk if needed. Dip some (preferably stale) white bread, or slices of french bread, in the egg mixture as you heat some butter in a non-stick frying pan.
Put the bacon under the grill on full heat (or preheat at a sensible heat and get your bacon cooked before you start with the bread, it's over to you how dangerously you want to live!).
Turn the bread quickly and coat the other side with the egg mixture. Transfer the bread to the frying pan and cook until golden brown on each side. Takes roughly 1-2 minutes each side.
Serve your hot French toast with the crisp bacon and drizzle over Maple Syrup (note: NOT maple flavoured syrup or sauce). Delicious.
